Sweet, Tangy Superfood Salad

Asian inspired, Perfect meal prep! Sweet, tangy, crunchy, and packed with lots of greens and veggies!

ingredients:

  • cabbage slaw

  • Brussels sprouts

  • Kale

  • Ginger Dressing

  • crispy onion or wonton topping

  • almond slices

  • Tangerines

  • apples

  • Goat cheese (the blue berry or cran is my favorite)

  • Optional meat toppings: Sesame Ginger Salmon or Chicken (recipe linked)


Instructions:

  1. finely chop Brussels Sprouts and kale and add them to a large bowl with the cabbage slaw. base how much you use off of how many servings you would like!

  2. chop all fruit and add to the bowl with the desired amount of dressing, almonds, wontons, and goat cheese crumbles.

  3. Mix all together very thoroughly and allow to sit for at least an hour so that the Brussells sprouts and Kale soak up flavors and aren’t bland
