Homemade Chicken Salad

Make with or without an avocado base! Perfect sunny day snack or meal prep!

Ingredients:

  • Canned chicken breast (I use brookesdale)

  • Light, Olive oil based Mayo (primal kitchen has great, healthy Mayo options)

  • Celery

  • purple grapes

  • walnuts

  • green apples

  • salt & pepper

  • Optional: Avocado


Instructions:

  1. chop up celery, grapes (cut these in half), walnuts, and apples

  2. drain chicken (1 can makes 2 servings, so make accordingly to how many servings that you need)

  3. Add chicken to a bowl with one large scoop of Mayo. Mix all together

  4. Add in all toppings and chopped avocados (optional)

  5. enjoy! great on wraps, lettuce wraps, on a croissant, or by itself!
