Healthy Crispy Chicken Nuggets/Tenders

So easy, packed with protein, fiber, and tons of flavor!
Ingredients:
Tenders: Chicken tenderloins
Nuggets: Canned Chicken Breast
Olive oil
Eggs
Steel cut oats
Seasonings of choice
unsweetened greek yogurt (only for nuggets)
optional: Nutritional yeast (find in baking section)
Tenders:
In a bowl, crack two eggs and beat them
in a blender, blend up oats, add seasons of choice, and optional: a sprinkle of nutritional yeast
Dip chicken in the egg first and then in oat mixture until fully coated
AirFryer at 350 for about 10-12 minutes, Oven 350 for 30 min, or stove top with olive oil on medium heat. Let oil heat up first and then just fry them in that
Nuggets:
Blend oats, seasonings, yeast in a blender
Drain the chicken and then In a bowl, mash the canned chicken up.
Beat in one egg
Slowly add the blended oat mix and mix until the chicken can ball up and stay together. You don’t want to add too many oats or the biggest will just taste like bread. So just slowly add in and mix until it sticks together. You can save the rest of the oat mix in a bag for later
Olive oil in a pan, medium heat. Let it heat up and then add the little tiny nugget Pattie’s in. Keep turning over until they’re as crispy as you want!
This works great for my Buffalo Chicken Lettuce wraps and pairs great with my homemade protein ranch!
