Buffalo Chicken Flatbread

High protein, easy to make, and packed with flavor! A quick and easy lunch or light dinner...and, yes... you can eat the whole thing to yourself ;)

Ingredients:

  • Protein Wrap (or wrap of choice) You can also use the Homemade tortillas!

  • Shredded chicken breast (or canned chicken breast is what I use)

  • Cottage Cheese

  • Buffalo Sauce

  • Celery chopped

  • Basic seasonings: Salt, pepper, garlic powder, onion powder

  • Optional: Ranch, Greek yogurt ranch, or Homemade Protein Ranch!

  • Optional: Fresh parsley or cilantro

  • Optional: Feta Cheese crumbles

  • Optional: chopped red onions

Instructions:

  1. In a large bowl, mix chicken, cottage cheese, and hot sauce. Add more cheese for a creamier mix and more sauce for more spice!

  2. Spread the mix over one tortilla

  3. Place in the air fryer at 350 and eyeball until the edges are crispy. This could take 5-10 minutes. You will need to continue to check. If you don't have an air fryer, place in the over at 375 and eyeball until the edges of the crust are crispy

  4. Sprinkle toppings of choice over the top ad then cut! I use red onions, feta cheese crumbles, fresh cilantro, and homemade ranch drizzle.
