Shrimp and/or Black Bean Tacos

Ingredients:

  • Pack of mango salsa or plain Pico de Gallo

  • Shrimp

  • Canned low sodium black beans

  • Cabbage Slaw

  • Corn Tortillas (Can substitute for flour or Homemade Tortillas)

  • Minced Garlic

  • Lemon Juice

  • Olive Oil

  • Sriracha (or hot sauce of choice)

  • Light, olive oil mayo (Primal Kitchen Mayo or Veganaise are higher priced, but great options)

  • Optional Ingredients: dried or fresh parsley, fresh cilantro, shredded cheese

Slaw Topping:

  1. Add desired amount of cabbage slaw to a mixing bowl and slowly begin adding small scoops of mayo and mixing until it is your desired creaminess.

  2. Add in salt, cracked black pepper, Sriracha, and optional: Splash of lemon juice and fresh cilantro) **Small amount of the sriracha will not make it spicy, it will just add flavor. Add a small amount, taste, and continue to gradually add in until it is to your liking!

  3. Put in the fridge to chill until you have completed the rest of the meal

Shrimp:

  1. Remove the tails and wash

  2. Add olive oil to a an on medium heat with minced garlic and a few splashes of lemon juice

  3. Add shrimp to the pan and turn until fully cooked. ** Spoon the oils in the pan over the shrimp as they are cooking. This is called Basting, and it will help the meat to hold moisture and flavor)

Black Beans (refried style)

  1. Add strained black beans to a pot on medium heat with a drizzle of olive oil

  2. Once warm, mash the black beans until they resemble refried beans.

  3. The mixture will appear dry and chunky, continue to add slow amounts of olive oil (you can add shredded cheese too if you would like) until it is the consistency that you want.

  4. Season with onion powder, garlic powder, salt, and pepper

  5. These can be smeared as the base of your taco or can act solely as the protein portion!

Meal Prep Instructions:

If you choose to meal prep this for the week, you will want to have ingredients separated from the shell! So you can put all of your toppings into the prep containers, and keep your shells in a separate slot or separate bag/container. This will help them from getting soggy or falling apart.
