Creamy Coconut Cilantro Rice

coconut milk is packed with antioxidant, anti-inflammatory agents, and electrolytes! This is great, refreshing option for a side and stays fresh all week for a meal prep!

Ingredients:
1 cup Jasmine rice
1 can Coconut milk unsweetened
Fresh Cilantro
Lemon Pepper (if you don’t have it, just a splash of lemon juice and cracked black pepper)
Onion powder
Salt & pepper
optional: splash of lemon or lime juice
Instructions:
Add one cup of jasmine rice to a pot with one can of coconut milk on medium heat
fill up half of the can with water and pour that in as well.
Cover and let cook. **stir occasionally so that the rice and milk don’t stick to the bottom**
As it cooks, taste the rice. If it is still hard, add a half can more water. Continue this until the rice is cooked to your liking.
Once it is done cooking, turn off the heat and add in however much chopped, fresh cilantro that you would like as well as your lemon pepper.
Pairs great with my Buffalo Chicken Lettuce wraps or my Sesame Ginger Salmon!
